Quinoa Salad w/ Crispy Prosciutto Chips, Spiced Pepitas & Ginger Lime Vanilla Vinaigrette

Ingredients

  • 6 thin slices prosciutto
  • 2 cups cooked quinoa (cooked according to package instructions)
  • 1 cup fresh baby spinach (julienned)
  • 1 granny smith apple (cubed)
  • 1/3 cup dried cherries (diced if large)
  • 3 green onions (finely chopped)
  • 2 tablespoons chia seeds
  • 3 clementines or mandarin oranges (peeled and sectioned)
  • 1 Recipe Spiced Pepitas
  • 1 Recipe Ginger Lime Vanilla Vinaigrette

Directions

1. Cut prosciutto slices in half and lay on a baking sheet.
2. Crisp in a preheated 350 degree (F) oven for approximately 12 minutes. Time will vary depending on the thickness of the prosciutto slices.
3. Set crisped prosciutto aside to cool.
4. In a large mixing bowl, combine cooked quinoa, julienned spinach, cubed apple, dried cherries, green onions, chia seeds, and segmented clementines (or mandarin oranges).
5. Add dressing and stir well to combine.
6. Place a serving of the dressed salad in a bowl or on a plate and top with 1/2 slice of crisped prosciutto - crumbled - and approximately 1.5 Tbsp of spiced pepitas.
7. Enjoy!

Spiced Pepitas

Meal type Salad, Snack

Ingredients

  • 1 cup pepitas
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil

Directions

1. In a small bowl mix all ingredients until the pepitas are well coated with oil, sugar and cayenne.
2. Spread pepitas in a single layer on a baking sheet and toast in a preheated 350 degree (F) oven for 10 minutes, stirring after 5 minutes..
3. Keep an eye (and a nose) on the pepitas so they don't burn.
4. Remove from oven and cool.

Ginger Lime Vanilla Vinaigrette

Ingredients

  • 1/4 cup olive oil
  • 1 lime (zest and juice)
  • 1 tablespoon ginger (grated using a microplane grater)
  • 1 clove garlic (minced)
  • 1 pinch red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon vanilla paste

Directions

1. Whisk all ingredients EXCEPT olive oil in a small bowl.
2. Slowly whisk in olive oil.
