Ingredients

    Marinated Chicken

    • ¼ cup red pepper jelly
    • 1 ½ tsp. soy sauce
    • 1/8 tsp. ground coriander
    • Pinch ground ginger
    • 1 clove garlic minced,
    • ½ tsp. red pepper flakes, optional
    • 2 lbs. chicken tenders, cut into 1” pieces

    Peanut Sauce

    • 3 Tbsp. creamy peanut butter
    • ¾ cup canned unsweetened coconut milk (top white part only)
    • 2 ½ Tbsp. soy sauce
    • 2 Tbsp. chicken broth
    • 1 garlic clove, minced
    • ½ tsp. grated yellow onion
    • 1 ½ Tbsp. dark brown sugar
    • 1 tsp. lime juice

    Instructions

    Marinated Chicken

    1. Mix the pepper jelly, soy sauce, coriander, ginger, garlic and red pepper flakes together in a medium bowl.

    2. Set aside.

    3. Skewer the chicken cubes closely together on a double skewer.

    4. Place the skewered chicken in a large zip-top bag.

    5. Add ¾ of the marinade to the bag and massage to coat. Reserve the remaining ¼ marinade for after cooking.

    6. Refrigerate for 1 to 2 hours.

    Peanut Sauce

    1. Whisk together all of the ingredients in a small bowl.

    2. Set aside.

    Cooking & Serving

    1. Set the BGE for direct cooking and heat to 400 degrees F.

    2. Cook the skewered chicken for 3 to 4 minutes on each side until done.

    3. Transfer to a serving platter and brush with the reserved ¼ marinade.

    4. Serve with peanut sauce and enjoy!
